If you like Creature Collecting games like Pokemon you should consider looking at the Siralim series. Basically a viking settler sim with great building mechanics. You can play with friends or by yourself and get a little bit done in short chunks over time. I also want to mention Valheim as it's one of the most chill survival/ crafting games ever released. Log in, dig some holes, plant some trees and then be done for the day. In a similar vein to Stardew, Animal Crossing is solid for just a chill experience. Very chill game where you can go through an in-game day in around 20-30 minutes and then call it until next time you wanna give that tender love and care to your crops again. Stardew Valley is a great suggestion as well. I jump into it for a bit between releases and then come back once I'm burned out on new titles. You can skip or listen to as much dialogue as you'd like and I'm finding that with Valhalla, it may take me a few years to beat because of this. Do a couple side or main quests and then hop out for a bit. Others have mentioned the new AC games and I think they're great for a quick session. Witcher 3 with it's DLC has plenty to do and come back to. I think I've got something like 150 hours on PC and then 80 or so once they released the PS5 upgrade. I don't see No Man's Sky mentioned here but it's near the top of my list as far as hours played goes.
